MAIN ENTREE: Scallops with corn, bacon and avocado relish
Watch the video by chef Alton Brown, as there’s definitely a technique. Don’t rely on buying by the pound, as you’ll want a count of 4 large scallops per person (plus some extra to test and taste). Remember to double the recipe for both the scallops and side.
