Taste of India — April Dinner

bbExotic spices excite the senses with this Indian inspired dinner. Fresh and flavorful, yet with easy to follow instructions, thanks to members Peter and Carla for this delightful menu. As a reminder, hosts provide the libations. You’ll want to consult with your local wine shop for recommended wine pairings, or try starting with a growler of Indian beer.

MENU & RECIPE LINKS: Plan on doubling all recipes to serve 8 or more. The main dish needs to be quadrupled.

APPETIZER: Garam Marsala Hummus – serve with chips and veggies

FIRST COURSE: Cool Cucumber Salad

MAIN ENTREE: Chicken Tikka Masala w/Naan (Naan can be purchased rather than made from scratch)  NOTE: This recipe looks like a serving for 2, so you’ll need to do the math and quadruple the recipe to have enough chicken for eight. One lb. serves about two people (2 breasts). Better to have leftovers — or seconds!

SIDE: Pan Fried Cauliflower

DESSERT: Tamil-style Sweet Rice Pudding
